I think the best breakfast in Bellingham, WA is Diamond Jim's Grill. I used to think "I" made the best biscuit's and gravy in town. But after going to Diamond Jim's I must admit they do have the best biscuit's and gravy I've had outside of my own kitchen in Bellingham.
Not too thick, not too runny, and
loads of sausage!
Diamond Jim's specialize in offering home potatoes "your way!"

And they grill them to perfection!
I'm an avid lover of vegetables, so of course I have had the veggie omelet! Loaded with veggies. A lot of places go overboard
with cheese toppings and they tend to be real greasy. Not so with
Diamond Jim. They use a better cheese product. It's clean and non-greasy! You actually do feel like you have eaten a healthy omelet.
The only down fall at Diamond Jim's is that it is small and popular! So if you want breakfast, you need to get there early or
you'll be waiting for a table till someone leaves and the parking can be tricky.
But, ya, the absolute best breakfast in Bellingham, WA, is Diamond Jim's by far!
They also play my favorite tunes with KISM in the back ground...can't beat that! And they do have a very laid-back atmosphere and the prices are "normal." You can get a decent breakfast for less than $10 and it'll definitely fill you up...
